- Combine all-purpose flour, granulated sugar, baking powder, and salt in a mixing bowl.
- In a separate bowl, whisk together eggs, vegetable oil, vanilla extract, lemon zest, and anise extract (if using).
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- Cover the dough and chill in the refrigerator for at least 30 minutes.
- Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
