  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup (1 1/2 sticks) cold unsalted butter, cubed
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 cups fresh or frozen blueberries
  • 2 tablespoons lemon juice
  • 2 tablespoons cornstarch

Instructions

  • Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
  • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  • Press half of the crumb mixture into the prepared baking pan to form the crust.
  • In a separate bowl, gently toss the blueberries with lemon juice and cornstarch.
  • Pour the blueberry mixture over the crust.
  • Sprinkle the remaining crumb mixture over the blueberry filling.
  • Bake for 30-35 minutes, or until the crust and topping are golden brown and the filling is bubbly.
  • Let the bars cool completely before cutting into squares and serving.
