Rich, buttery flavour with the satisfying texture of a cookie. A comfort-food favorite with a healthier-ish twist that’s perfect for family gatherings.

Ingredients

350g Butter Cake Mix or Yellow Cake Mix

1 Egg

1 Tsp Vanilla Extract

225g Cream Cheese (Softened)

113g Unsalted Butter (Softened)

110g Powdered Sugar (Plus Extra for Dusting)

Instructions

1. In a large mixing bowl, beat the cream cheese, butter, egg and vanilla using a handheld beater until fluffy.

2. Fold in the butter cake mix using a spatula until combined.

3. Chill the cookie dough in the refrigerator for 30-45 minutes.

4. Preheat the oven to 175°C (350°F). Line two baking trays with parchment paper.

5. Place the powdered sugar in a bowl. Scoop and roll the cookie into medium sized balls.

6. Place them on the baking trays, evenly spaced.

7. Bake for 12 minutes or until golden.

8. Allow the cookies to cool slightly on the tray to help them harden up. Remove to a cooling rack to cool fully.

9. Sift the powdered sugar evenly over the cookies.

10. Enjoy!

Notes

Variations: You can use a wide variety of different cake mix flavors, such as classic vanilla, rich chocolate, or fruity strawberry, to create delightful and delicious treats for everyone to enjoy. For an extra treat, try adding chocolate chips or sprinkles!

 

Chilling time: I highly recommend chilling the dough for at least 30 minutes before using it. This dough tends to be quite sticky, and it becomes significantly easier to work with after it has been chilled for a little while. While you don’t necessarily have to refrigerate the dough if you find yourself in a hurry, do keep in mind that you will likely end up with messy fingers if you skip this step. This step also helps prevent the cookies from spreading too much in the oven.
