These Chewy Gingerbread Brownies by Sophie from SweetCraft Recipes are the ultimate cozy holiday treat — perfectly spiced, rich with molasses, and irresistibly chewy. With warm ginger and cinnamon in every bite, these brownies deliver nostalgic gingerbread flavor in a fudgy, brownie form. A comforting “healthy twist” dessert that’s easy, festive, and utterly delicious!

Ingredients

Scale

¾ cup (170 g) unsalted butter, melted

1 cup (200 g) packed light brown sugar

2 large eggs, room temperature

¼ cup (85 g) unsulphured molasses

1 teaspoon vanilla extract

2 ½ cups (312 g) all-purpose flour

1 ½ teaspoons ground ginger

1 teaspoon ground cinnamon

1 teaspoon baking powder

½ teaspoon kosher salt

Confectioners’ sugar, for dusting (optional)

Instructions

Preheat oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper, leaving overhang on the sides for easy removal.

In a large bowl, combine the melted butter and brown sugar. Whisk until smooth and glossy.

Add eggs, molasses, and vanilla extract. Whisk until fully incorporated.

In a separate bowl, whisk together flour, ginger, cinnamon, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.

Spread the thick batter evenly into the prepared pan.

Bake for 30–35 minutes, or until edges are set and a toothpick inserted in the center comes out with moist crumbs (not wet batter). For a 9×13-inch pan, bake 25–30 minutes.

Cool completely in the pan on a wire rack. Once cooled, dust with confectioners’ sugar if desired.

Lift brownies out of the pan using the parchment handles, slice, and serve.

Notes

💡 **Sophie’s Tips**

• Don’t overmix once dry ingredients are added — this keeps brownies chewy, not cakey.

• Slightly underbake for a rich, fudgy texture.

• Cool completely before slicing for clean edges.

• For extra spice, add a pinch of cloves or allspice.

• Add-ins like white chocolate chips, candied ginger, or toasted nuts make fun variations.

🌱 **Healthy Twist**

These brownies rely on brown sugar and molasses for natural sweetness and depth, highlighting warming spices for flavor instead of excess sugar. Real ingredients, real comfort — a mindful indulgence you can feel good about.

🧊 **Storage**
