  • 1/2 cup freeze-dried strawberries, crushed
  • 1 cup (2 sticks) unsalted butter, softened

  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 12 ounces dark chocolate, chopped
  • 1 teaspoon coconut oil (optional)

Instructions

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, crushed freeze-dried strawberries, baking powder, and salt.
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Chill the dough for at least 30 minutes (or up to overnight).
  • Roll the dough into 1-inch balls and place them on the prepared baking sheets, leaving some space between them.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let the cookies cool completely on the baking sheets.
  • Melt the dark chocolate in a double boiler or microwave in 30-second intervals, stirring until smooth. Stir in coconut oil (if using).
  • Dip the cooled cookies into the melted chocolate or drizzle chocolate over them. Sprinkle with crushed freeze-dried strawberries or other desired toppings.
  • Let the chocolate set completely before serving.
