Chocolate protein bars are a no-bake, high-protein snack made with coconut flour, protein powder, and cream cheese for a fudgy texture. These bars are easy to customize, freezer-friendly, and perfect for post-workout fuel, healthy desserts, or on-the-go snacks.

Ingredients

**Protein Bars**

Vanilla protein powder – 1 cup

Coconut flour – ½ cup

Cocoa powder – 3 tablespoons

Granulated sweetener – ¼ cup

Low-fat cream cheese, softened – 4 oz

Red gel food coloring – 2 teaspoons

Unsweetened almond milk – ⅓ cup + 1 tablespoon

**Optional Coating**

White chocolate chips – ½ cup

Instructions

**Combine Dry Ingredients**

In a medium bowl, whisk together protein powder, coconut flour, cocoa powder, and sweetener until evenly combined and lump-free.

 

**Incorporate Cream Cheese**

Add softened cream cheese and red gel food coloring. Use your hands to work the mixture together until the cream cheese is fully incorporated.

 

**Add Milk and Knead**

Gradually add almond milk while kneading until a firm, pliable dough forms. Adjust consistency as needed by adding coconut flour or milk in small amounts.

 

**Shape and Freeze**

Shape dough into a rectangle on parchment paper. Wrap tightly and freeze for at least 30 minutes until firm.

 

**Slice and Coat**

Slice into 7 bars. Melt white chocolate chips in 20-second microwave intervals, stirring between each. Dip or drizzle bars with melted chocolate.

 

**Set and Serve**

Place coated bars back on parchment paper and allow chocolate to set completely before serving or storing.

Notes

• Coconut flour is highly absorbent—adjust liquid carefully.

• Use gel food coloring to avoid adding excess moisture.

• Freeze before slicing for clean edges.
