These vibrant Sombrero Cookies are a fun, no-bake dessert perfect for parties, fiestas, and kids’ activities. Quick, colorful, and easy to assemble.
24 round sugar cookies
1 cup rainbow nonpareils sprinkles
1 cup buttercream icing
24 assorted gumdrops
1 disposable pastry bag
1. Place sprinkles in a shallow bowl.
2. Fill a pastry bag with buttercream and snip the tip.
3. Pipe a ring around each cookie edge and a dot in the center.
4. Press cookie icing-side into sprinkles to coat.
5. Turn upright and add icing to bottom of a gumdrop.
6. Press gumdrop in center to form sombrero shape.
7. Repeat and let set 15 minutes before serving.
Use soft sugar cookies for best texture.
Ziploc bags work instead of pastry bags.
Fresh gumdrops stick better.
