  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups Oreo cookies, roughly crushed

Instructions

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Fold in the crushed Oreo cookies.
  • Chill the dough for at least 30 minutes (or up to overnight).
  • Drop rounded tablespoons of dough onto the prepared baking sheets, leaving some space between each cookie.
  • Optionally, press a few extra Oreo pieces into the tops of the cookies before baking.
  • Bake for 9-11 minutes, or until the edges are golden brown and the centers are still slightly soft. They will continue to set as they cool.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
