  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 120 ml buttermilk
  • 1 teaspoon white vinegar
  • 1 teaspoon red gel food coloring
  • 227 grams full-fat cream cheese, softened
  • 350 grams powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in egg and vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix in vinegar and red food coloring until well combined. Do not overmix.
  • Chill dough for at least 30 minutes.
  • Use a cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheets.
  • Bake for 10-12 minutes, or until edges are set and centers are slightly soft. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  • For the frosting, beat together cream cheese and vanilla extract until smooth. Gradually add powdered sugar until desired consistency is reached.
  • Frost cooled cookies with cream cheese frosting.
