1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
2 teaspoons vanilla extract
2 tablespoons red gel food coloring
1/2 cup buttermilk
8 ounces cream cheese, softened
1/2 cup (1 stick) unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
2-3 tablespoons milk or heavy cream
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract and red food coloring.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
Cover the dough and chill for at least 2 hours (or overnight).
Use a 1/4 cup cookie scoop to portion out the dough onto the prepared baking sheets.
Bake for 10-12 minutes, or until the edges are set and the centers are slightly soft.
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
While the cookies are cooling, prepare the cream cheese frosting. In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
Gradually add the powdered sugar, beating until smooth. Stir in the vanilla extract and milk or heavy cream until you reach your desired consistency.
Once the cookies are completely cool, frost them with the cream cheese frosting.
