3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs

1/2 cup tahini
1 cup dark chocolate chips
1 cup shelled, unsalted pistachios, roughly chopped

Instructions
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda, and salt.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Beat in eggs one at a time, then stir in vanilla extract and tahini.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Stir in dark chocolate chips and pistachios.
Chill the dough for at least 30 minutes (or overnight).
Drop rounded tablespoons of dough onto the prepared baking sheets.
Sprinkle with flaky sea salt, if desired.
Bake for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft. Rotate the baking sheet halfway through baking.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
