This Easter Rocky Road is a delightful no-bake treat that embodies the essence of the holiday season, featuring a rich chocolate base, crunchy biscuits, fluffy marshmallows, and an abundance of festive mini eggs.
400g Milk Chocolate
100g Unsalted Butter
100g Golden Syrup
100g Pink Mini Marshmallows
150g Digestive Biscuits (Chopped)
234g Caramel Mini Eggs (Chopped)
180g Mini Eggs (Chopped)
110g Crunchie Mini Eggs (Chopped)
Chocolate Top
250g White Chocolate
3 Mini Chocolate Bunnies
80g Mini Eggs
1. Line an 8-inch square pan with parchment paper.
2. In a large microwaveable bowl, place the milk chocolate, golden syrup and butter in. Microwave in 30 second bursts until fully melted and combined.
3. Place marshmallows, Digestive biscuits and all the Easter mini eggs then fold together until everything is evenly coated.
4. Pour into your prepared square pan and evenly spread with a spatula.
5. In a small microwaveable, microwave the white chocolate in 30 second bursts until fully melted.
6. Pour the white chocolate all over the rocky road and evenly spread with a spatula.
7. Place the mini chocolate bunnies and mini eggs all over the top.
8. Refrigerate for 3 hours or until set.
9. Cut into as many pieces as you like.
10. Enjoy!
Mini Easter Eggs: You can honestly use whatever combination of mini easter eggs as you like. I used Mini M&M Crunchy Eggs instead of Mini Eggs in the rocky road and on top.
