These irresistible Chocolate Peanut Butter Stacks are an ultimate no-bake comfort food, combining crispy buttery crackers with a creamy peanut butter-marshmallow filling, all dipped in rich chocolate. A quick, easy, and endlessly satisfying treat perfected by Sophie for family gatherings.

48 Ritz crackers or buttery golden round crackers

½ cup creamy peanut butter

½ cup marshmallow creme

1 pound chocolate, coarsely chopped and melted for dipping

holiday sprinkles, optional but recommended

Instructions

1. Line a baking sheet with parchment or wax paper.

2. Lay 24 crackers on a baking sheet; set aside.

3. To a medium bowl, add the peanut butter and marshmallow creme, and stir to combine until smooth.

4. Evenly spread a thin layer of the peanut butter-marshmallow mixture on the 24 crackers on the baking sheet.

5. Top with the remaining 24 crackers to create sandwiches; set aside.

6. To a medium microwave-safe bowl, add the chopped chocolate and heat on high power in 15 to 30 second bursts, stirring after each burst, until chocolate can be stirred smooth. Be careful not to overheat.

7. Dip each stack into the chocolate using one or two forks, allowing the excess to drip off. Place dipped stacks on the baking sheet.

8. Optionally add sprinkles, to taste, before the chocolate sets.

9. Place the baking sheet in the fridge or freezer until the chocolate has hardened (about 15-30 minutes) before serving.

Notes

For the best results, use a good quality melting chocolate or chocolate bark for a smooth, firm coating. If using regular chocolate chips, you might add ½-1 teaspoon of coconut oil per cup of chocolate to improve consistency.

Ensure the peanut butter and marshmallow creme are well combined for a uniform filling. Sophie recommends stirring vigorously!

These stacks are fantastic for making ahead of time. Store them in an airtight container in the refrigerator for up to 7 days, or freeze for longer storage.
