113g Unsalted Butter (Softened)
55g Vegetable Oil
100g Granulated White Sugar
1 Egg (Room Temperature)
2 Tsp Vanilla Extract
300g Plain Flour
1/4 Tsp Salt

240ml Heavy Cream (Very Cold)
2 Tbsp Granulated White Sugar (for cream)
1 Tsp Vanilla Extract (for cream)
240g Strawberries (Sliced)
1. Preheat your oven to 175°C (350°F). Line 1-2 baking trays with parchment paper and set them aside.
2. In a large mixing bowl, using a handheld electric beater, beat together the softened unsalted butter, vegetable oil, and 100g granulated white sugar until the mixture is light, fluffy, and pale in color.
3. Beat in the room temperature egg and 2 teaspoons of vanilla extract until they are fully combined.
4. Using a spatula, gently fold in the plain flour, salt, and baking powder. Mix until just combined. Be careful not to overmix.
5. Scoop out 11 equal-sized cookie balls (approximately 2 tablespoons each) and place them on the prepared baking trays, ensuring they are evenly spaced.
