Instructions

  • Heat-treat the flour: Spread the flour on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or microwave in 30-second intervals, stirring in between, until it reaches 165°F (74°C). Let it cool completely before using. Pulse the flour in a food processor to remove any clumps.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the softened cream cheese and vanilla extract until smooth.
  • Gradually add the heat-treated flour, cocoa powder, and salt, mixing until just combined. Be careful not to overmix.
  • Stir in the red food coloring until you achieve your desired shade of red. Start with 1 teaspoon and add more as needed.
  • Fold in the white chocolate chips.
  • Chill the dough for at least 30 minutes to allow the flavors to meld and the dough to firm up.
