  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup hot cocoa mix
  • 1 cup mini marshmallows (optional)

Instructions

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  • In a large bowl, cream together the browned butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the hot cocoa mix.
  • Chill the dough for at least 30 minutes (or up to overnight).
  • Scoop rounded tablespoons of dough onto the prepared baking sheets.
  • If using marshmallows, gently press a few into the tops of the cookies during the last 1-2 minutes of baking.
  • Bake for 8-10 minutes, or until the edges are set and the centers are still slightly soft.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
