Rice Chex Cereal – 4 cups
Green candy melts – 1 cup
Creamy peanut butter – ¼ cup
Vegetable or canola oil – ½ tbsp
Powdered sugar – ¾ to 1 cup
Green and white M&M’s – ¼ cup
Shamrock sprinkles – ¼ cup
Shamrock marshmallows (from Lucky Charms) – ¼ cup
In a microwave-safe bowl, combine the green candy melts, peanut butter, and oil.
Microwave on HIGH for 30 seconds, stir, and continue in 15-second intervals until smooth.
Place the cereal in a large bowl and pour the melted mixture over it, tossing gently to coat.
Transfer the coated cereal to a gallon-sized zip-top bag and add the powdered sugar.
Seal the bag and shake vigorously until every piece of cereal is white and coated.
Spread the mixture onto parchment paper to set.
Once set, toss with M&Ms, sprinkles, and marshmallows.
Store in an airtight container.
