A delightful combination of rich, buttery cookie dough studded with crunchy Maltesers.
250g Unsalted Butter (Softened)
80g Caster Sugar
75g Brown Sugar
1/2 Cup Sweetened Condensed Milk
2 tsp Vanilla Extract
280g Maltesers (Roughly Chopped)
300g Self Raising Flour (Sifted)
75g Plain Flour (Sifted)
1. Preheat the oven to 180°C. Line 3-4 baking trays with parchment paper and set aside.
2. In a large bowl, beat the butter and both sugars with a handheld electrical beater until combined and creamy.
3. Add the condensed milk and vanilla then beat again until combined.
4. Fold in both flours until combined, then fold in about 170g of the Maltesers until evenly combined (Save the remaining Maltesers).
5. Roll mixture into medium sized balls and place on the baking trays. Gently flatten with your hands and sprinkle the remaining Maltesers on top, gently pressing them into the cookies.
6. Bake for 10 minutes or until golden, swapping trays in between.
7. Allow to cool slightly to help firm up, then transfer to a cooling rack.

Top cookies with Maltesers: I strongly suggest reserving a portion of the Maltesers, giving them a rough chop, and sprinkling them on top of each cookie prior to baking. Incorporating the Maltesers into the cookie dough might result in them getting lost and not being as visible, so adding them as a topping enhances the look of the cookies, providing a subtle crunch as well.
