  • 2 tablespoons golden syrup (or light corn syrup)
  • 50 grams granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 200 grams semi-sweet chocolate
  • 1 tablespoon coconut oil (optional)
  • Festive sprinkles

Instructions

  • Prepare the shortbread base by combining flour, cold butter, sugar, and salt. Mix until a crumbly dough forms. Press into a lined baking pan and chill for 30 minutes.
  • Bake the shortbread base at 350°F (175°C) for 20-25 minutes, or until golden brown. Prick with a fork before baking to prevent puffing.
  • While the shortbread is baking, prepare the caramel. Combine sweetened condensed milk, butter, golden syrup, sugar, vanilla extract, and salt in a heavy-bottomed saucepan. Cook over medium-low heat, stirring constantly, until the caramel is thick and golden brown (about 15-20 minutes).
  • Pour the caramel over the baked shortbread base and chill for at least 1 hour.
  • Melt the chocolate with coconut oil (if using) in a double boiler or microwave in 30-second intervals, stirring until smooth.
  • Pour the melted chocolate over the chilled caramel layer and immediately sprinkle with festive sprinkles.
  • Chill for another 30 minutes to allow the chocolate to set.
  • Use a Christmas tree cookie cutter or a sharp knife to cut the shortbread into tree shapes.
