1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
1 cup creamy peanut butter
2 large eggs, at room temperature
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
3 cups old-fashioned rolled oats
1 1/2 cups all-purpose flour
1 cup M&Ms
1 cup chocolate chips (optional)
Instructions
Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the peanut butter, eggs, and vanilla extract until well combined.
In a separate bowl, whisk together the baking soda, salt, flour, and rolled oats.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Stir in the M&Ms and chocolate chips (if using).
Press the dough evenly into the prepared baking pan.
Gently press additional M&Ms into the top of the bars.
Bake for 20-25 minutes, or until the edges are golden brown and the center is set. A toothpick inserted into the center should come out with moist crumbs attached.
Let the bars cool completely in the pan before cutting into squares.
