1 1/3 cup almond flour

1 cup natural peanut butter

1/4 tsp salt only if peanut butter isn’t salted*

1/4 cup maple syrup

1 tsp vanilla extract

1 cup chocolate chips

1 tsp coconut oil

Instructions

1. In a large mixing bowl, combine the almond flour, natural peanut butter, salt (if using), maple syrup, and vanilla extract. Mix thoroughly until a uniform, pliable dough forms.

2. Using a small cookie scoop or your hands, roll the mixture into bite-sized balls, approximately 1-inch in diameter. Place them on a parchment-lined baking sheet or plate. Refrigerate these balls for at least 30 minutes to firm up.

3. In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second increments, stirring well after each, until the chocolate is completely melted and smooth.

4. Once the peanut butter balls are firm, use a fork or a toothpick to carefully dip each ball into the melted chocolate, covering approximately 2/3 of the ball. Lift the chocolate-dipped balls out, allowing any excess chocolate to drip off.

5. Place the chocolate-dipped balls back onto the parchment-lined tray. Repeat with the remaining balls. Once all are dipped, return the tray to the refrigerator for at least 15 minutes, or until the chocolate coating is completely set.

6. Serve chilled and enjoy! Store any leftover No-Bake Peanut Butter Chocolate Balls in an airtight container in the refrigerator for up to 1 week.

Notes

* You can also use oat flour, however there will be an adjustment for amount. Start with 3/4 cup and add more as needed until you are able to roll into balls.

For best results, use a natural, unsweetened peanut butter.

Ensure balls are well-chilled before dipping in chocolate for easier handling.
