A healthy, no-bake snack made with freeze-dried strawberries, coconut, and plant-based protein powder. These soft, vibrant, naturally sweet protein bites take only 10 minutes to prepare and are perfect for meal prep, post-workout fuel, or a wholesome anytime treat.
Dry Ingredients:
1 cup freeze-dried strawberries
1 cup unsweetened shredded coconut
1/3 cup (31 g) strawberry pea protein powder
Wet Ingredients:
1 tablespoon raw honey (or maple syrup for vegan)
1/2 teaspoon vanilla extract
3–5 tablespoons water (as needed)
Optional Coatings:
Crushed freeze-dried strawberries
Shredded coconut
Melted chocolate
1. Add freeze-dried strawberries, shredded coconut, and protein powder to a food processor and blend for about 1 minute until the mixture becomes a fine powder.
2. Add honey (or maple syrup), vanilla extract, and 3 tablespoons of water.
3. Blend again until the mixture begins to clump. If dry or crumbly, add water 1 tablespoon at a time until a soft, rollable dough forms.
4. Scoop out tablespoon-sized portions and roll into smooth balls. You should get about 15–16 bites.
5. Optional: Roll the bites in crushed freeze-dried strawberry powder, shredded coconut, or dip in melted chocolate.
6. Refrigerate the bites for 10–15 minutes to firm up.
7. Store in an airtight container for up to 2 weeks in the fridge or freeze for up to 2 months.
Start with the minimum water amount—different protein powders absorb liquid differently.
Dough should feel like soft playdough: not sticky, not crumbly.
To make it fully vegan, swap honey for maple syrup or agave.
