Ingredients

  • 3 cups Rolled Oats (Old-fashioned)
  • 1 1/2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1 cup packed Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 cup (2 sticks) Unsalted Butter, softened
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • Optional: Chocolate chips, raisins, chopped nuts, dried cranberries, sea salt

Instructions

  • Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together the rolled oats, flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • If using, stir in your desired add-ins, such as chocolate chips, raisins, or nuts.
  • Drop by rounded tablespoons onto the prepared baking sheets, leaving about 2 inches between each cookie.
  • Bake for 9-11 minutes, or until the edges are golden brown and the centers are set.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
