- 1 1/2 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 1 teaspoon Cinnamon
- 1 cup packed Brown Sugar
- 1/2 cup Granulated Sugar
- 1 cup (2 sticks) Unsalted Butter, softened
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- Optional: Chocolate chips, raisins, chopped nuts, dried cranberries, sea salt
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the rolled oats, flour, baking soda, baking powder, salt, and cinnamon. Set aside.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- If using, stir in your desired add-ins, such as chocolate chips, raisins, or nuts.
- Drop by rounded tablespoons onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake for 9-11 minutes, or until the edges are golden brown and the centers are set.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
