  • 1 cup unsalted butter (225g)
  • 1 cup sugar (200g)
  • 1 cup brown sugar (200g)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour (240g)
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 cups oats

Instructions

  1. Preheat oven to 350°F. Line 3 sheets with parchment.
  2. Cream butter and sugars until fluffy. Add eggs and vanilla.
  3. Mix flour, cinnamon, baking soda, and salt in a bowl. Add to wet mix.
  4. Fold in oats. Scoop dough balls and place 2 inches apart.
  5. Bake 10–13 minutes until set. Cool 10 minutes before transferring.

Notes

One of the most common pitfalls is overmixing. Once the flour and oats are added, stir just until combined. Overmixing develops gluten in the flour, resulting in tough and dry cookies instead of chewy ones.

Baking too long makes cookies crisp and brittle, while underbaking leaves them raw inside. The sweet spot is pulling them out when the edges turn golden and the centers still look slightly soft. Remember, cookies continue to bake on the sheet after being removed from the oven.
