  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups diced fresh peaches (or frozen, thawed and drained)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup rolled oats
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in egg and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Gently fold in the diced peaches, cinnamon, nutmeg, rolled oats, and nuts (if using).
  • Chill the dough for at least 30 minutes.
  • Drop by rounded tablespoons onto the prepared baking sheets.
  • Bake for 10-12 minutes, or until the edges are golden brown and the centers are set but still slightly soft.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
