These Pink Sugar Cookie Bars are Sophie’s personal favorite, perfected over 9+ tests to ensure every bite is wonderfully chewy and topped with a vibrant, sweet frosting. Perfect for family gatherings, holidays, or any day you need a little comfort!

Sugar Cookie Bar

225g Unsalted Butter (Room Temperature)

300g Granulated Sugar

1 Egg (Room Temperature)

1 Tsp Vanilla Extract

320g Plain Flour

1/4 Tsp Salt

1/4 Tsp Baking Soda

Pink Buttercream Frosting

113g Unsalted Butter (Room Temperature)

505g Powdered Sugar (Sifted)

2 Tsp Vanilla Extract

1-3 Tbsp Milk

Pink or red food colouring

Sprinkles

Instructions

1. Sugar Cookie Bar

2. Preheat the oven to 180°C. Grease and line an 8-inch square pan with parchment paper and set aside.

3. In a large mixing bowl, cream the butter and sugar. Add the egg and vanilla then beat again until combined.

4. Sift in the flour, salt and baking soda. Using a spatula, fold together the ingredients until just combined and a dough forms.

5. Transfer the dough to the lined pan with press down into an even layer.

6. Bake for 20-25 minutes or until golden. Allow to cool fully.

9. In a large mixing bowl, beat the butter using a handheld beater until creamy. Add 1 cup of the powdered sugar then beat again until combined.

10. Add the powdered sugar 1 cup at a time until fully combined. Add the vanilla and 1 Tbsp of milk at a time until desired consistency.

11. Add the food colouring one drop at a time, while beating until the desired colour.

12. Carefully remove the cookie bar from the pan.

13. Frost the cookie using a spatula and top with sprinkles.

Notes

Room temperature ingredients: Take your butter, cream cheese, and even the egg out of the fridge well ahead of time. Using room-temperature ingredients not only makes the mixing process much easier, but it also helps achieve a smoother texture and better results in your baked creations.

 

Don’t overmix: Overly mixed cookie dough can result in dense, tough cookie bars that lack the delightful texture everyone loves. Remember to handle the dough gently to achieve the perfect consistency!

 

Don’t overbake: Perfectly soft and chewy sugar cookie bars is all about timing when it comes to taking them out of the oven. You’ll want to remove the bars while they’re still just a tad underbaked—not overly cooked. They should be lightly golden and browned at the edges yet remain delightfully soft in the middle. This allows the bars to continue baking as they cool down, resulting in a beautifully tender texture.

 

Allow cookie to cool fully!: Allow the cookie bar to cool completely at room temperature before applying the frosting to them. If the cookie is too hot when you spread the buttercream, it will simply melt and create a sticky mess that is difficult to work with. Patience at this stage will ensure a beautifully finished treat.
