  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 2 tablespoons red food coloring (gel recommended)
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 cup buttermilk (or substitute)
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  • Stir in the red food coloring until the dough is evenly colored.
  • Cover the dough and chill for at least 30 minutes (or longer for best results).
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Roll the dough into 1-inch balls and place on the prepared baking sheets.
  • Bake for 8-10 minutes, or until the edges are set and the centers are still slightly soft.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • Decorate with frosting, sprinkles, or a dusting of powdered sugar, if desired.
