Instructions

  • Gather all ingredients.
  • In a bowl, combine all-purpose flour, baking soda, apple pie spice, and salt.
  • In a separate bowl, cream together softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Fold in the diced apples.
  • Cover the dough and chill in the refrigerator for at least 30 minutes.
  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
