This St. Patrick’s Day Layered Trifle is a show-stopping dessert that combines the rich flavor of fudgy brownies with cool mint and creamy pudding. It is incredibly easy to assemble and perfect for large gatherings or family celebrations.

Ingredients

Brownie Mix (8×8 pan size) – 1 box

Instant Vanilla Pudding Mix – 3.5 oz

Whole Milk (for pudding) – 2 cups

Whipped Topping (Cool Whip) – 8 oz

Green Food Coloring – 3-5 drops

Mint Oreos – 15 cookies

Instructions

Cook brownies according to box directions. Allow to cool completely to ensure clean cuts.

Make pudding according to package directions with cold milk. Once thickened, stir in green food coloring until desired shade is reached.

Place Mint Oreos inside a Ziploc bag. Seal and crush using a rolling pin or heavy spoon.

In a large glass trifle bowl, begin layering: place half of the brownie squares at the bottom.

Add half of the green pudding over the brownies, followed by half of the whipped topping.

Repeat the layers: remaining brownies, remaining pudding, and remaining whipped topping.

Sprinkle the crushed Mint Oreos generously over the top.

Chill in the refrigerator for at least 1 hour before serving to allow flavors to meld.

Notes

• Ensure brownies are 100% cold before layering to prevent the whipped topping from melting.

• You can substitute Pistachio pudding for the vanilla pudding if you prefer a natural green color and nutty flavor.

• For a “Pot of Gold” look, add gold-wrapped chocolate coins or yellow sprinkles on top.
