This festive St. Patrick’s Day Lucky Charms Popcorn is the ultimate sweet and salty treat. Combining crunchy popcorn, iconic marshmallow cereal, and a hint of mint, it’s a “Leprechaun Bait” that kids and adults will adore. Perfect for school parties or movie nights!
4 cups plain popcorn (air-popped or lightly salted)
2 cups Lucky Charms cereal
2 tablespoons unsalted butter
1½ cups mini marshmallows
¼ cup mint M&Ms
1 tablespoon St. Patrick’s Day themed sprinkles (green, white, yellow)
Prepare a large baking sheet with wax paper or a silicone mat.
In a large heat-safe bowl, combine the plain popcorn and Lucky Charms cereal. Toss gently to distribute the marshmallows.
In a medium saucepan over medium heat, melt the butter until liquid.
Add the mini marshmallows to the butter. Stir constantly with a spatula until the marshmallows are just melted and smooth. Remove from heat immediately to avoid toughening.
Pour the warm marshmallow mixture over the popcorn and cereal. Using a greased spatula, gently fold the mixture until everything is evenly coated.
Transfer the popcorn mixture to the prepared baking sheet, spreading it into an even layer.
Immediately sprinkle the mint M&Ms and festive sprinkles over the top while the marshmallow is still tacky.
Allow the mix to cool and set for about 15-20 minutes. Break into clusters and serve.
• Use fresh popcorn for the best texture; stale popcorn will become chewy once the marshmallow is added.
