  • 2 1/4 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 14 ounces caramel candies
  • 1/4 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil (optional)

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  • Beat in the egg yolks, vanilla extract, and salt.
  • Gradually add the flour, mixing until just combined. Do not overmix.
  • Cover the dough and chill for at least 30 minutes (or up to overnight).
  • Roll the dough into 1-inch balls and place them on the prepared baking sheets.
  • Use your thumb or the back of a small spoon to make a deep indentation in the center of each cookie.
  • Bake for 10-12 minutes, or until the edges are lightly golden brown.
  • While the cookies are baking, prepare the caramel filling. In a saucepan, combine the caramel candies and heavy cream. Melt over low heat, stirring constantly, until smooth.
  • Remove the cookies from the oven and let them cool for a few minutes on the baking sheets before transferring them to a wire rack.
  • Fill each thumbprint with the melted caramel.
  • In a microwave-safe bowl, melt the chocolate chips with coconut oil (if using) in 30-second intervals, stirring in between, until smooth.
  • Drizzle the melted chocolate over the caramel-filled cookies.
  • Let the chocolate set before serving. Store in an airtight container.
