1 package (15.25 oz) Strawberry Cake Mix

2 large eggs

1/2 cup vegetable oil or canola oil

1/4 cup Valentine’s Day sprinkles, plus more for decoration

Instructions

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

2. In a large mixing bowl, combine the entire package of strawberry cake mix, two large eggs, and 1/2 cup of vegetable or canola oil. Mix with an electric mixer on low speed, or by hand with a spoon, until all ingredients are just combined and no dry streaks of cake mix remain. Do not overmix. Gently fold in about 1/4 cup of Valentine’s Day sprinkles into the dough.

3. Using a mini ice cream scoop (about 2 tablespoons) or by hand, roll the dough into golf-ball sized spheres. Place them onto the prepared baking sheet, ensuring they are about 2 inches apart to allow for spreading.

4. Press additional sprinkles onto the tops of each cookie dough ball for extra festive flair. Bake for 9-12 minutes, or until the edges begin to brown slightly and the centers are set. The cookies will look slightly soft in the middle but will firm up as they cool.

5. Remove the baking sheet from the oven and let the cookies cool on the sheet for 2-3 minutes before transferring them to a wire rack to cool completely. Enjoy your delicious, homemade Valentine’s Day treats!
