These Vibrant Rainbow Jello Cookies by Sophie are soft, chewy, and bursting with fruity flavor and color! Each cookie is infused with Jell-O powder for a nostalgic, old-fashioned treat that’s as beautiful as it is delicious — perfect for parties, holidays, and family fun.

Ingredients

Scale

1 cup (226 g) salted butter, softened

1 ¼ cups (250 g) granulated sugar, plus extra for rolling

2 large eggs, room temperature

3 cups (360 g) all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 (6 oz / 170 g) box flavored gelatin powder (or 6 small 3 oz boxes for rainbow colors)

Optional: extra gelatin powder in assorted flavors for coloring separate dough portions

Instructions

**Preheat Oven**

Set oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.

 

**Cream Butter & Sugar**

Beat softened butter and sugar together for 2–3 minutes until light, pale, and fluffy.

 

**Add Eggs**

Mix in eggs one at a time until fully combined. Scrape down the bowl.

 

**Combine Dry Ingredients**

In another bowl, whisk together flour, baking soda, and salt.

 

**Mix Dough**

Gradually add dry mixture to wet ingredients. Mix on low speed just until combined — do not overmix.

 

**Add Gelatin Flavor**

For one flavor: add one 6 oz box of gelatin and mix until evenly colored.

For rainbow cookies: divide dough into 6 portions and mix 2 tbsp of different gelatin flavors into each.

 

**Shape & Coat**

Roll dough into 1½ tbsp balls, coat in extra sugar, and arrange 2 inches apart on baking sheets.

 

**Bake**

Bake for 10–12 minutes, until edges are set and centers are slightly puffy and soft.

 

**Cool**

Let cookies rest on the pan 5 minutes, then transfer to a wire rack to cool completely.
