  • 2 tablespoon cream cheese regular or plant-based
  • ¾ cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×9 or 8×8 square baking dish or line it with parchment paper.
  3. In a large mixing bowl, combine the milk, lemon juice, sugar, olive oil, vanilla extract, lemon extract (if using), baking powder, baking soda, and salt.
  4. Mix until all these ingredients are well combined.
  5. Add the flour to the wet mixture.
  6. Mix until a smooth batter is formed, being careful not to overmix.
  7. Add the frozen blueberries to the batter.
  8. Fold the blueberries gently into the batter until evenly distributed.
  9. Pour the batter into the prepared baking dish.
