These delightful butter cookies are easy to make, perfect for beginners, and feature a delicious chocolate dip with optional sprinkles.

  • 1 cup unsalted butter, room temperature 226g
  • 3/4 cup granulated sugar 150g
  • 1 Tbsp vanilla extract or vanilla bean paste 15g
  • 2 tsp almond extract 10g
  • 1 large egg, room temperature 56g
  • 2 1/4 cups all-purpose flour – fluffed, spooned & leveled 290g
  • 1 tsp fine salt 6g
  • 2 Tbsp nonpareil sprinkles (optional)
  • 1 cup milk, semi-sweet, or dark chocolate chips, melted 175g
  • 2 tsp vegetable or canola oil 10g
  • flakey sea salt – garnish (optional)

Instructions

  1. Make space in your refrigerator or freezer for baking sheets.
  2. Line 2 large baking sheets with parchment paper or silicone baking mats.
  3. Set the lined baking sheets aside.
  4. In a large bowl, combine 1 cup of room temperature butter and 3/4 cup granulated sugar.
  5. Beat the butter and sugar together on medium-high speed for a couple of minutes.
  6. Beat until the mixture looks light and fluffy.
  7. Add 1 large egg to the mixture.
  8. Add 1 Tbsp vanilla extract or vanilla bean paste.
  9. Add 2 tsp almond extract.
  10. Beat at a medium-high speed until all ingredients are combined.
  11. Scrape the sides and bottom of the bowl with a rubber spatula as needed.
  12. Add 2 1/4 cups of all-purpose flour to the bowl.
  13. Add 1 tsp fine salt.
  14. Mix on a low speed until the flour is mostly combined.
  15. Increase the speed to medium-high.
  16. Beat until the dough is completely combined, smooth, and thick but still pipeable.
  17. Fit a large piping bag with a large, closed star tip (like an Ateco 848).
  18. Scoop about 1/2 cup of dough into the piping bag.
  19. Pipe a 3-inch swirl or squiggle onto a clean surface to test the dough consistency.
  20. If the dough is too thick to pipe, scoop it back into the bowl.
  21. Mix in 1 tsp of milk into the dough.
  22. Repeat adding milk as needed until the dough is pipeable.
  23. Once the dough is pipeable, scoop the rest of the dough into the bag.
  24. Seal the top of the piping bag with a rubber band or clip.
  25. Pipe 3-inch swirls or squiggles onto the prepared baking sheets.
  26. Space the cookies about 2 inches apart on the baking sheets.
  27. Place the baking sheets with piped cookies into the refrigerator for at least 30 minutes.
  28. Alternatively, place them in the freezer for 15 minutes.
  29. While the dough chills, preheat your oven to 350°F (175°C).
  30. Once the oven is fully preheated, bake one tray of cookies at a time.
  31. Place the baking sheet on the middle rack of your oven.
  32. Bake for 14-17 minutes.
  33. Bake until the sides of the cookies are just beginning to brown.
  34. Remove the cookies from the oven.
  35. Let the cookies cool on the baking sheet for 10 minutes.
  36. Transfer the cooled cookies to a wire rack to finish cooling completely.
  37. As the cookies cool, melt 1 cup of chocolate chips in a small bowl.
  38. Use a double boiler or microwave (heat in 20-second increments, stirring between) to melt the chocolate.
  39. Once fully melted, mix in 2 tsp of vegetable or canola oil.
  40. Cover a clean baking sheet with parchment paper.
  41. Dip each cooled cookie halfway into the melted chocolate.
  42. Let any excess chocolate drip off the cookie.
  43. Scrape off the bottom of each cookie along the edge of the bowl to remove excess chocolate.
  44. Top the dipped cookies with a sprinkle of flakey sea salt and/or nonpareil sprinkles, if desired.
  45. Place the dipped cookies on the parchment-lined baking sheet.
  46. Let the chocolate firm up at room temperature for 30 minutes.
  47. Alternatively, place them in the fridge for 15 minutes to set the chocolate.

Ensure butter and egg are at room temperature for a smooth dough.
Measure flour correctly by fluffing, spooning, and leveling to avoid dense cookies.
Chilling the piped dough is crucial for cookies to hold their shape during baking.
