Soft, chewy Pumpkin Chocolate Chip Cookies, perfect for beginners and packed with warm spice and chocolate.

  • 2 ½ cups all-purpose flour
  • 1 Tbsp pumpkin pie spice
  • 2 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter – softened to room temperature
  • ½ cup brown sugar
  • ¾ cup granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line two baking sheets with parchment paper.
  3. In a medium bowl, whisk together the all-purpose flour, pumpkin pie spice, baking soda, baking powder, and salt.
  4. Set the dry ingredient bowl aside.
  5. In a large bowl, beat the softened butter with brown sugar and granulated sugar until the mixture is light and fluffy.
  6. Add the pumpkin puree to the butter and sugar mixture.
  7. Add the large egg to the mixture.
  8. Add the vanilla extract to the mixture.
  9. Beat the mixture again until all wet ingredients are combined and smooth.
  10. Gradually add the dry ingredients to the wet ingredients.
  11. Mix the dough until just smooth, being careful not to overmix.
  12. Gently fold in the chocolate chips until they are just combined throughout the dough.
  13. Drop 1 tablespoon of cookie dough onto the prepared baking sheets.
  14. Space the cookie dough mounds about 2 inches apart.
  15. Place a couple of extra chocolate chips on top of each cookie dough mound for a nice presentation.
  16. Bake for 10-12 minutes, or until the edges are set and lightly golden.
  17. Let the cookies cool slightly on the baking sheets for a few minutes.
  18. Carefully transfer the slightly cooled cookies to a wire rack to cool completely.

Notes

Ensure your butter is truly softened, not melted, for the best texture.
Do not overmix the dough after adding the flour; mix just until combined.
Use 100% pure pumpkin puree, not pumpkin pie filling.
Cookies are done when the edges are set but the centers still look a little soft.
