Soft and chewy iced pumpkin oatmeal cookies packed with warm spices and topped with a sweet cinnamon glaze. Perfect for cozy fall baking and holiday treats.

Ingredients

1 cup pumpkin puree

1 cup rolled oats

1 1/2 cups all-purpose flour

1/2 cup unsalted butter melted

3/4 cup brown sugar

1/4 cup granulated sugar

1 egg

1 tsp vanilla extract

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

For the glaze:

1 cup powdered sugar

1/2 tsp cinnamon

1/2 tsp vanilla extract

1-2 tbsp water or milk

Instructions

1. Preheat oven to 350°F and line baking sheets with parchment paper

2. In a bowl mix oats flour baking soda baking powder cinnamon nutmeg and salt

3. In another bowl whisk melted butter pumpkin puree brown sugar and granulated sugar

4. Add egg and vanilla extract and mix until smooth

5. Combine wet and dry ingredients and mix until just combined

6. Scoop dough onto baking sheet spacing cookies apart

7. Bake for 10-12 minutes until edges are set and centers are soft

8. Cool cookies completely on a wire rack

9. Mix glaze ingredients until smooth

10. Dip or drizzle glaze over cooled cookies and let set before serving

Notes

Do not overmix the dough to keep cookies soft

Let cookies cool completely before glazing

Chill dough if too soft before baking

Store in airtight container for up to 3 days
