Soft cookies with a graham cracker crumb coating, gooey marshmallow centers, and Hershey Kiss toppers. A fun, convenient version of campfire s’mores perfect for sharing.

Ingredients

Scale

1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1 large egg
1/4 cup graham cracker crumbs
1 1/2 cups miniature marshmallows
24 Hershey’s Kisses (dark or milk chocolate)

Instructions

Preheat oven to 350°F (175°C)
In a bowl, whisk flour, baking soda, and salt
In another bowl, cream butter and brown sugar until light and fluffy
Beat in egg until well combined
Fold in flour mixture into butter mixture until just combined
Refrigerate dough 10 minutes
Form dough into 1-inch balls
Roll each ball in graham cracker crumbs to coat
Place on parchment-lined baking sheets
Bake for 8 minutes
Remove and place 1 marshmallow on each cookie
Broil for 1-2 minutes until marshmallows are lightly toasted
Press 1 Hershey’s Kiss into each marshmallow
Let cool completely before serving

Notes

For a chewier texture, substitute 1/4 cup flour with bread flour
Ensure baking soda is fresh for optimal rise
Use non-alcoholic chocolate if available
Store in airtight container at room temperature up to 5 days
