A bright and fruity quick bread featuring fresh strawberries and zesty lemon, perfect for beginner bakers.

  • 1 cup unsweetened almond or oat milk
  • 1 cup sugar
  • ½ cup lemon juice
  • ¼ cup melted vegan butter
  • 1 teaspoon vanilla
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 ¼ cup regular or gluten-free all purpose flour
  • 1 cup diced strawberries
  • 2 tablespoon melted vegan butter (for frosting)
  • 2 oz vegan cream cheese (for frosting)
  • ¾ cup powdered sugar (for frosting)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9×5 inch metal loaf pan with non-stick spray.
  3. In a large bowl, whisk together the almond milk, sugar, lemon juice, melted butter, and vanilla until combined.
  4. Add the baking powder and baking soda to the wet mixture.
  5. Mix quickly until combined; the mixture will begin to fizz.
  6. Add the flour to the wet ingredients.
  7. Mix until the batter is smooth, being careful not to overmix.
  8. Gently fold in the diced strawberries.
  9. Pour the batter into the prepared loaf pan.
  10. Bake in the preheated oven for 40-45 minutes.
  11. Check for doneness by inserting a toothpick into the center; it should come out clean.
  12. While the bread bakes, prepare the frosting.
  13. In a medium bowl, use an electric hand mixer or whisk to combine the melted vegan butter, vegan cream cheese, and powdered sugar until smooth.
  14. Spread the frosting over the warm or cooled loaf.
  15. Slice and enjoy immediately.
