A unique upside-down cake with the nutty richness of tahini and sweet caramelized bananas.

Ingredients

  • 1/2 cup mashed bananas
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamon
  • 1/4 teaspoon salt
  • 2/3 cup white sugar
  • 3 tablespoons butter
  • 2 tablespoons tahini
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup buttermilk
  • 1/2 cup brown sugar
  • 3 tablespoons butter
  • 1/4 teaspoon salt
  • 1 tablespoon date syrup
  • 1 tablespoon vanilla bean paste
  • 3 bananas

Instructions

  1. Preheat the oven to 350 degrees fahrenheit.
  2. Prep an 8” cake pan with cooking spray and parchment paper.
  3. Place banana halves in the pan, cut side down.
  4. Heat caramel ingredients in a saucepan until bubbling.
  5. Pour caramel over bananas.
  6. Mash bananas with lemon juice.
  7. Mix flour, baking soda, spices, and salt.
  8. Cream sugar, tahini, and butter until fluffy.
  9. Add egg and vanilla to the creamed mixture.
  10. Alternate adding dry ingredients and buttermilk to the mix.
  11. Fold in mashed bananas.
  12. Pour batter over caramel and bananas in pan.
  13. Bake for 45-55 minutes, until a toothpick comes out clean.
  14. Cool for 5-10 minutes, then flip onto a plate to serve.

Notes

Ensure bananas are ripe.
Line the pan with parchment paper.
Let the cake cool slightly before flipping.
Test with a toothpick for doneness.
