These pumpkin muffins are wonderfully moist, perfectly spiced, and so easy to make. They are the ideal bake for beginners looking for a delicious fall treat.

  • 1 1/2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1 15 oz can of pure pumpkin
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 1/4 cups plus 1 Tbsp sugar, divided
  • 1 tsp cinnamon

Instructions

  1. Place your oven rack in the middle position.
  2. Preheat your oven to 350°F (175°C).
  3. Line 18 cups of two 12-cup muffin pans with paper liners.
  4. In a small bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and pumpkin pie spice.
  5. Set this dry mixture aside.
  6. In the bowl of an electric stand mixer fitted with the paddle attachment, add the pure pumpkin puree, vegetable oil, large eggs, and 1 1/4 cups of sugar.
  7. Mix these wet ingredients together on the lowest speed until just combined.
  8. Add the reserved flour mixture to the wet ingredients in the mixer bowl.
  9. Continue to mix on the lowest setting until the flour mixture is just combined into the wet ingredients.
  10. Do not overmix; a few lumps are okay.
  11. In a separate small bowl, stir together the remaining 1 tablespoon of sugar and 1 teaspoon of cinnamon.
  12. Divide the muffin batter evenly among the 18 prepared muffin cups, filling each about 2/3 of the way full.
  13. Sprinkle the cinnamon-sugar mixture over the tops of each muffin.
  14. Bake for 20-25 minutes, or until the muffins are puffed and golden brown.
  15. Insert a toothpick into the center of a muffin; it should come out clean when done.
  16. Cool the muffins in the pan on a wire rack for 5 minutes.
  17. Carefully transfer the muffins from the pan to the wire rack.
  18. Cool the muffins completely on the wire rack before storing.

Notes

Always use pure pumpkin puree, not pumpkin pie filling.
Avoid overmixing the batter for tender muffins.
Ensure your oven is fully preheated for the best rise.
